Fire on the road — the boss at the grill

Our work does not end at the counter. Wherever a fire is burning, we are happy to be there — here is a look at events where the boss himself stands at the grill.
Everything needed fits in the car: cool boxes, a parasol and good spirits. The fire is lit on site — sometimes in the smoker, sometimes in a ceramic kamado or a kettle grill, sometimes in an old masonry fireplace with grates over the embers, like in the countryside in the old days. Every fire has its own character; the work is the same: slow, patient, and with an aroma you do not forget.
Good meat does not ask for much. It starts with a beautifully marbled cut on the board — fire and patience do the rest.
Thick bone-in steaks only go on the grate once the embers are ready. The flame may kiss the edge — that makes the crust — but the real work is done by the embers, not the fire.
The rolled roast turns on the spit over the embers until the crust is glassy and crisp. Beef ribs come out of the smoker dark with smoke — and tender, falling-apart meat becomes pulled beef.
There is room for everything else too: chicken roasted to golden skin, peppers, cherry tomatoes, foil-wrapped potatoes and polenta on the grate — even pineapple. And if you like, build yourself a taco: a grilled tortilla, salsa and a slice of steak.
At the end, the full board: ćevapčići, skewers, chicken, sausages, breaded bites, flatbread, fries and fresh cabbage salad. When only the edges of the board are visible, we know it was a good day.
