Two dozen tasting cups: how this started

A year ago: one grill, one folding table, a few bowls — and a row of small cups that holds the whole story.

"A year ago it all started: one grill and one table, a few bowls." That is all the boss wrote. The photograph tells the rest.

And then, in a row across half the table: two dozen small tasting cups.

Everything hangs on those. Nobody entirely certain of their product sets out two dozen tasting portions. You set them out because you want to hear what people say — and because you are ready to hear that something isn't right yet.

The smoker is already there in the background. Someone is helping to set up at the back right, crates of drinks stacked to the left. It is cool enough for a hooded top and the sun is low. A yard, a table, one morning.

A year on, that single table has become a round trip that goes every month to Graz, the Leibnitz district, Zagreb and Sisak. The smoker is the same one. So are the sauces in the jars.

What has changed is that you no longer have to happen to walk past that yard.

And today?

The beginning isn't far away. There is still no shop to walk into — you order by WhatsApp or through the form, and before every order somebody rings back personally to settle the cut, the weight and the price. Much the way you would do it at a folding table.
